One Thai mom, one small kitchen, and a stubborn belief that Thai food belongs in a burrito.

✦ From Thailand to Stillwater

A Mom Who Cooks

Jang grew up in Thailand, where cooking was never a career choice — it was just what happened every day, several times a day, with whatever was fresh at the market. She learned by standing next to the people cooking, tasting as she went, adjusting fish sauce and lime until it was right.

Life brought her to the United States, and eventually to Oklahoma. She is a mother of two, and like most parents, her days are measured in school runs, prep lists and one more thing to get done before closing. Cooking stayed the constant — the thing she does because she loves it, not because it is easy.

Thai Loco GoGo started small: a blue food truck, a chalkboard listing spring rolls, green chili pork tacos and coconut shrimp tacos, and a line of regulars who kept coming back. That truck is still the heart of the brand.

Today the kitchen serves lunch Monday through Thursday and caters offices, parties and events around Stillwater. Same hands, same recipes, just more boxes going out the door.

✦ Why Thai and Mexican

The Fusion Philosophy

Both cuisines are built on chili, lime, herbs and bold sauces, and both are at their best eaten on the street. Putting them together was less an experiment than an obvious idea.

Thai first

Curry pastes, lemongrass, galangal, fish sauce, palm sugar and fresh basil. The flavor base is never toned down.

Mexican format

Burritos, tacos, quesadillas and rolled handhelds — formats that hold heat, travel well and eat one-handed.

Cooked to order

Nothing sits under a lamp. Bowls and boxes are assembled the morning they go out the window.

✦ Where it started

The Blue Truck

The original chalkboard read fried spring roll, green chili pork taco, coconut shrimp taco. Three items, one window, a lot of repeat customers. Those early tacos are the reason the menu looks the way it does now.

The truck still rolls out for events. If you want it parked at your venue with food coming off the flat top in front of your guests, that is one of the three catering formats we offer.
